I just fitted a gator 3 jaw adj tru chuck, dial it up and there is a little bit of runout.

no probs its an adj tru, only if I knew how to use it.

So my question is how do I go about using the adj tru feature or where can I find info on this subject.

Adjust Trues are designed to allow you to adjust for concentricity after you get a workpiece in the jaws.

If you have a workpiece that’s been turned that you’re putting back into your 3-jaw, you know it is concentric to the portion that was turned.  You chuck it up, and then use the Adjust-True bolts to adjust it until the turned portion of the workpiece is concentric.  Do this by sweeping with a DTI just as  you would a 4-jaw.
